When I was a kid, my family would occasionally go to Red Lobster for a meal. I never could finish my plate because I would fill up entirely on their famous cheddar bay biscuits. They are seriously the best things that come out of their kitchen.
These days I don’t eat out much, but that doesn’t mean I don’t want to enjoy the same foods that I used to. I’ve been making this flavorful biscuit recipe for years. It’s such an easy recipe and tastes just like the real thing- soft, cheesy, and garlicky!
Aside from the amazing taste, the next best thing about this recipe is how easy it is to throw together. This cheesy biscuit recipe is made with simple ingredients you probably already have in your own kitchen, which means no extra trips to the grocery store! If you need something quick to add to dinner, these are great because you can have homemade biscuits on the dinner table in no more than half an hour.
Ingredients
For the biscuits:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon sugar
- 1 cup shredded cheddar cheese (a little more if you like them extra cheesy)
- 1/2 cup unsalted butter, melted
- 1 cup buttermilk (or buttermilk substitute)
For the garlic butter:
- 3 tablespoons unsalted butter, melted
- 1 teaspoon garlic powder
- 1/2 teaspoon dried parsley
- 1/4 teaspoon salt
How to make Cheddar Bay Biscuits
Preheat the oven to 400° F.
Mix together the flour, baking powder, baking soda, salt, garlic powder, and sugar in a large bowl.
Add the shredded cheddar cheese to the dry ingredients and mix. Side note: I don’t always use cheddar cheese. In the past, I’ve used whatever cheese I happen to have. I’ve used Monterey Jack and Gouda with great success. The flavor is different but still delicious!
Add the melted butter and buttermilk (or a buttermilk substitute) to the flour mixture until just combined, but don’t overmix! Mix just until all of the flour is incorporated into the dough. Overmixing can cause your biscuits to lose their light fluffy texture.
Drop the dough by the heaping spoonful on a parchment paper-lined baking sheet. If you have one, you can use a cookie scoop instead of a spoon. They don’t need to look pretty; a roughly roundish shape works fine.
Bake for about 15 minutes. They should be a light golden brown on top.
Garlic Butter
For the garlic butter, mix the melted butter, garlic powder, parsley, and salt together in a small bowl.
Brush the buttery topping onto the tops of the warm biscuits.
Buttermilk Substitute
If you don’t have buttermilk, don’t worry! It’s easy to whip up a substitute with just a couple of ingredients you probably already have in your pantry!
For one cup of buttermilk substitute, all you need is 1 scant cup of whole milk and 1 tablespoon of either white vinegar or lemon juice. Let it sit for a few minutes until it looks slightly curdled and voila! You have the perfect buttermilk substitute for this recipe.
I’ll admit that I use this trick MOST of the time when I make these biscuits and it works a treat. I don’t usually keep buttermilk on hand unless I need it for a very specific recipe that I’ve planned for. These biscuits are usually a spur-of-the-moment thing for me because I need something quick to serve with dinner. Planning ahead is not my strength, so this substitute is something I use often.
What to serve with Red Lobster Cheddar Bay Biscuits
As they do at the restaurant, try them with seafood! With fish, crab, lobster, or shrimp, you really can’t go wrong.
However, I most commonly serve them with meat dishes like steak or a roast, but I can’t deny that they’re fantastic with soup as well. Oh, and pasta! Yum!
Is there anything they’re not good with?! No. The answer is no. They are the perfect addition to almost any main course.
How to store Cheddar Bay Biscuits?
If you happen to have any of these delicious biscuits leftover (doubtful, but IF you do), you can store them at room temperature in an airtight container. They’ll be good like that for a couple of days.
If you want to store them longer, you can freeze them in a Ziploc freezer bag.
